Summer Is Off To A Great Start!

This summer I've been spending more time in my garden, growing things we can eat and tending to my succulents. 

I've been blessed with a bounty of zucchini and tomatoes lately. 

I had been letting some of the zucchini grow very large, because as a first time zucchini grower, I didn't know of any reasons not to. After researching large zucchini, I learned that as the zucchini get larger, the insides become drier, seeds get larger, and the skin gets thicker, so large zucchinis are great for making breads, and not so great for sauteing. 

That led me to make our first zucchini cake of the summer. 

As you can see from the 2nd and 3rd photos, these zucchinis had grown quite large, and I had several of them. I've given away many zucchini, but still have so much left!

So, in the next week or two, I plan to make zucchini breads and cake, enough to give away to friends and neighbors. 

Some of the tomatoes are super tasty (according to my husband Brian), and some are a little mushy inside. The mushy ones will be relegated to making tomato sauce, while the others will become tomato sandwiches, ceviche, tomato and cucumber salad, and whatever else we come up with.
